In large skillet, cut bacon and fry into bacon bits, drain on paper towel and set aside
Salt and pepper chicken breasts on both sides. Pan sear breasts in bacon grease over medium heat for 12 minutes, turning every 3 minutes, or until juices run clear. Place in baking dish and set aside.
Preheat oven to 400℉
Add flour, 1/2 tsp salt, and 1/16 tsp pepper to grease and cracklings in skillet. Add butter, if needed, to form roux. Cook, stirring constantly, until golden brown and flour smells toasted.
Pour in chicken broth. Cook, stirring constantly, until thickened.
Pour 1/4 cup gravy over each chicken breast in baking dish. Pour remaining gravy (if any) over all.
Top each breast with 1 oz mushrooms, 1/4 of the bacon bits, and 1/4 cup cheese
Place in over for 3-5 minutes, or until cheese has melted.
