Chicken Tetrazzini

Ingredients

  • 2 cans cream of mushroom soup
  • 2 cups chicken broth
  • 1 1/2 Tbsp dried chives
  • 1 4 oz can mushrooms, drained
  • 2 cups shredded cheddar cheese
  • 2 1/4 cups dry white minute rice (4 1/2 cups cooked)
  • 3-4 chicken breasts

Directions

  1. Cook and shred chicken (see Cooked, Shredded Chicken)
  2. Heat oven to 350ยบ. Butter 9×13 casserole dish.
  3. Prepare rice as directed on package.
  4. Combine soup and chicken broth in large pot. Bring to a boil, mixing well.
  5. Remove from heat. Add chives, mushrooms, and cheese. Stir until cheese is melted.
  6. Stir in rice and chicken.
  7. Spoon prepared casserole dish.
  8. Bake, uncovered, for 30 minutes
