Ingredients
- 2 cans cream of mushroom soup
- 2 cups chicken broth
- 1 1/2 Tbsp dried chives
- 1 4 oz can mushrooms, drained
- 2 cups shredded cheddar cheese
- 2 1/4 cups dry white minute rice (4 1/2 cups cooked)
- 3-4 chicken breasts
Directions
- Cook and shred chicken (see Cooked, Shredded Chicken)
- Heat oven to 350ยบ. Butter 9×13 casserole dish.
- Prepare rice as directed on package.
- Combine soup and chicken broth in large pot. Bring to a boil, mixing well.
- Remove from heat. Add chives, mushrooms, and cheese. Stir until cheese is melted.
- Stir in rice and chicken.
- Spoon prepared casserole dish.
- Bake, uncovered, for 30 minutes
