Mammy’s Chicken and Dumplings

Ingredients

  • 1 1/2 cups flour
  • 3/4 tsp salt
  • 2 1/4 tsp baking powder
  • 3/4 cup milk
  • 1 Tbsp melted butter, shortening, or oil
  • 4 cups chicken broth
  • 2 chicken breasts

Directions

  1. Cook and shred chicken (see Cooked, Shredded Chicken).
  2. In large mixing bowl, mix together flour, salt, and baking powder.
  3. Add milk and oil and mix to form soft dough.
  4. Bring broth to boil in soup pot.
  5. Drop by tablespoonful* into boiling broth.
  6. Cover tightly and reduce heat to LOW.
  7. Steam without lifting lid for 12-15 minutes.
  8. Add meat back to stew and stir gently. Warm through without boiling.
  9. Serve over mashed potatoes.
