Ingredients
- 3 large potatoes, diced in 1-inch cubes
- 1 stick butter
- 1 tsp salt
- 1/4 tsp pepper
- Splash of milk
Directions
- Add diced potatoes to 2 inches salted cold water in saucepan.
- Bring to boil.
- Cover, reduce heat, and simmer 15-20 minutes or until potatoes fall apart when poked with a fork.
- Drain.
- Return potatoes to pan over medium-low heat. Stir until water has evaporated. Remove from stove.
- Add butter, salt, and pepper to potatoes. Cover and let sit a few minutes (butter will soften).
- Add splash of milk.
- Beat with hand mixer until smooth.
Notes
Can adjust milk, butter, salt/pepper as needed or to taste
Be careful not to over mix or potatoes will become gummy
