Dea’s Biscuit-topped Chicken Pot Pie

Ingredients

  • 1 can mixed vegetables, drained
  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 1 jar (12 oz) chicken gravy (Or, make your own… I do)
  • Sage to taste*
  • 1 cup Jiffy or Original Bisquick™ mix (Or, make your own… I do)
  • 1/4 cup milk
  • 2 eggs

Directions

  1. Heat oven to 375°.
  2. In medium saucepan, heat (or make) gravy. ***If making gravy, add sage, 1/2 tsp salt, and 1/16 tsp pepper when browning the flour. If using a jar of gravy, add sage here***
  3. Add vegetables and prepared chicken, heat through, stirring frequently.
  4. In medium bowl, stir remaining ingredients until well blended.
  5. Spread chicken mixture into 2 qt. casserole dish.
  6. Pour batter over chicken mixture.
  7. Bake uncovered 35 to 40 minutes or until crust is golden brown.
  8. Let stand 5 minutes before serving.

Notes

*I don’t measure this, but I would guess maybe 2 tsp to 1 Tbsp
